Chat up local brew masters in our Meet the Makers series, in which we welcome brewers and breweries for casual receptions in the bar area, celebrating new releases, rare beers, and interesting brewing techniques.
On Wednesday, April 10 our friends from Collective Arts Brewing will be in the house to talk beer and sample some great offerings, including Barrel Aged Imperial Porter, IPA #9, and Jam Up the Mash. We'll also have limited quantities of their Origin of Darkness collaboration with Forbidden Root Fine Botanic Beers

At 6:30 we will start with - Welcome Beer Sam ‘76
First Course: "Lobster Mac" Arancini- fried risotto balls stuffed with Maine lobster meat and melted cheese. Served with spicy saffron aioli. Paired with Porch Rocker
Second Course: Summer Ale Mussels - Fresh mussels simmered in Summer Ale, finished with Dijon Garlic and grilled crusty bread. Paired with Summer Ale
Third Course: Baja Style Chilean Sea Bass Tacos. Chilean sea bass pan-fried and served with napa cabbage, sriracha aioli, avocado, pickled onion, and lime crema. accompanied by Spanish fried rice. Paired with New England IPA
Fourth Course: ‘Brontosaurus’ Ribs - Braised Beef Plate Rib rubbed and smoked and braised. Served with maple butter sweet potatoes and finished with crispy bacon collard greens. Paired with Boston Lager
Dessert: Chocolate Souffle - with a melted chocolate center. Served with vanilla bean gelato, and chocolate ganache. Paired with Black Lager

We need your support to help the Chicago zoning board allow us to operate at our location. We are good stewards of the neighborhood, bringing good things to this area, but a few do not agree. Help us show them that we are a positive force building a place where everyone can enjoy. We will discuss what we can do so we can stay in business and not have the City of Chicago close our doors due to false claims. Light snacks and refreshments available.

In our latest guided tasting/discussion at Mousetrap, we’re going to take a deep dive into our new favorite white wine yeast strain, Torulaspora delbrueckii, as well as bring you into the process of introducing a new year round beer. We’ll discuss how we went from never having heard of this yeast strain to making it part of our core lineup in under a year. We’ll tap a sixth of Tiny Pillows, the first beer we ever brewed with Torulaspora, and see how that’s tasting. Speaking of that new year round beer? We’ll pour you a sample of Very Very Far and have an in-depth discussion of how, through mixed fermentation and selecting specific yeast cultures, we were able to create these unique and synergic fermentation flavors in the finished beer.
